Ever since the lockdown began, social media has turned into everyone’s solace. It’s the place you turn to when you need a break from watching the news and worrying about contracting the coronavirus. And now, it’s turned into your hotspot for anti-boredom activities. And unless you’ve been living under a rock, you would have noticed the stiff talent competition on Instagram & TikTok. From makeup hacks, DIYs to food recipes, suddenly everyone on your social media has got talent.
Last month, all the caffeine addicts missing their morning Starbucks run obsessed over something called Dalgona coffee. AKA, phiti hui coffee. And now, it looks like our breakfast, or shall we say brunch just got an upgrade. In less than a week, the hashtag #pancakecereal had over 10 million hits.
Allow me to introduce you to pancake cereal.
If breakfast is your favourite meal of the day, you probably need pancake cereal & dalgona coffee in your life. So what’s the fuss about this pancake cereal? It’s basically a bowl full of mini pancakes dressed up as a bowl of cereal.
How do you make pancake cereal?
Well, the good news is that this recipe (just like the dalgona coffee) calls for minimal culinary skills. So don’t worry about burning your kitchen down.
Here’s an easy pancake batter recipe for you:
- 1 cup all-purpose flour
- 1 small egg
- 2 tbsp melted butter
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 3/4 cups milk
- 3/4 tbsp sugar
Mix all the dry ingredients together and then add milk, egg and butter. Mix well until you have a smooth batter. Heat a shallow pan and grease it with canola oil or butter. Now, it’s time to make those mini pancakes. All you need to do is find a way to squeeze your pancake batter onto the pan. Don’t pour, squeeze – this is what will make your mini pancakes look like cereal.
Here are a few things you can use to squeeze out the pancake batter.
- A squeezy ketchup bottle
- A piping bag or a zip lock bag
- A bottle of water with a small hole in the cap
Squeeze mini pancakes all over the pan and cover it with a lid allowing them to cook evenly.
Once cooked, flip them over and your breakfast cereal is ready to be served. Transfer your mini pancakes into a cereal bowl and begin decorating it! You can add all sorts of toppings like Nutella, berries, honey, butter, maple syrup and chocolate sauce.
