Indian Mushroom Recipes

Mushroom Masala
Ingredients:
- 3 tbsp oil
- 250g mushrooms
- 1/2 cup sliced onions
- 2 slit green chillies
- 2 tsp chopped ginger
- 2 tsp chopped garlic
- 1 tsp chilli powder
- 1/2 tsp turmeric powder
- 1 cup tomato puree
- 1/2 cup water
- 2 tsp cashew paste
- 1 tsp kasuri methi
- 1 tbsp fresh cream
- Finely chopped coriander leaves
- Salt to taste
For making ground masala:
- 2 tsp coriander seeds
- 1 tsp black pepper
- 3-4 cloves
- 1 black cardamom
- 1 tsp cumin seeds
- 1 small cinnamon stick
Method:
- First, for making the ground masala, roast coriander seeds, black pepper, cloves, cardamom, cumin seeds and cinnamon stick and grind them all together to form a coarse powder. Keep it aside.
- In a pan, heat 3 tbsp oil and add mushrooms. Sauté for 2 minutes. Once done, keep the sauteed mushrooms aside.
- Add some oil in a pan and add sliced onions, green chillies, and cook until the onion turns translucent. Add ginger, garlic, and stir. Grind all of this to a smooth paste.
- Add 1 tsp oil over the smooth paste, and cook well. Add red chilli, haldi powder, and cook well.
- Once cooked, add 1 cup tomato puree. Mix it all well and cover it with a lid. Let it cook for 5 minutes.
- Add salt, and sauteed mushrooms and 1/2 cup water to it. Cover and cook for 5 minutes.
- Add 2 tsp cashew paste, ground masala (made earlier), kasuri methi, fresh cream and cook.
- Add chopped coriander for garnish. Masala mushroom is ready! Serve this Indian mushroom recipe hot with roti or pulao.
Mushroom Matar Sabzi
Ingredients:
- 400 gm mushrooms
- ½ cup green peas
- 10 cashew nuts
- 3 medium-sized tomatoes
- 2 tbsp oil
- Whole spices (Cinnamon, clove, cardamom, peppercorn)
- 1 tsp cumin seeds
- 1 tsp finely chopped garlic
- 1 tsp finely chopped ginger
- 2 green chillies
- 2 chopped onions
- ¼ tsp haldi powder
- 2 tsp Kashmiri chilli powder
- 1 tsp coriander powder
- ½ tsp garam masala powder
- 1 tbsp fresh cream
- Finely chopped coriander leaves
- 1 tsp salt
- 1 cup water
Method:
- First, blanch the tomatoes and let them cool down. Keep them aside.
- In a bowl, soak cashew nuts in some water for half an hour.
- Take a mixer grinder, and grind the blanched tomatoes and cashew nuts together to form a smooth paste.
- Heat oil in a kadhai/pan, and add the whole spices and cumin seeds.
- Next, add chopped ginger, garlic, onions and green chillies. Sauté them until the onions turn golden brown.
- Then add tomato- cashew nut puree to this, and let it cook for 5 minutes.
- Add turmeric powder, Kashmiri chilli powder, coriander powder, garam masala powder, salt and mix well. Cook until the oil separates.
- Once the oil separates, add green peas, and sauté for a bit. Then add sliced mushrooms, and mix well.
- Add a cup of water, close the lid of the pan, and let it cook for 8- 10 minutes.
- Lastly, add fresh cream and mix well.
- Garnish it with coriander leaves. The delicious Indian mushroom recipe- Mushroom matar sabzi is ready!
Mushroom Sukka
Ingredients:
For sukka masala:
- 1 tbsp cumin seeds
- 2 tbsp coriander seeds
- 3 dry red chillies
Other ingredients:
- 300 gm mushrooms sliced
- 2 tbsp oil
- 1 large onion chopped
- 10 curry leaves
- 1 tbsp ginger- garlic paste
- 1 finely chopped tomato
- 1/4 tsp haldi powder
- Salt to taste
- 50 ml water
- 1/2 tsp pepper powder
- Finely chopped coriander leaves
Method:
- To make sukka masala, finely blend cumin seeds, coriander seeds and dry red chillies. Keep it aside.
- Heat oil in a deep pan and add chopped onions and curry leaves. Sauté for 3 minutes.
- Add ginger-garlic paste, and sauté until onion turns translucent.
- Then add tomato, turmeric powder, chilli powder, 2 tbsp sukka masala (prepared earlier), and salt. Cook for 2 minutes. Add water for the masala to cook.
- Once cooked, add mushrooms and mix well. Cover the lid, and cook it on medium flame for 5 minutes.
- Add pepper powder, coriander leaves and mix well. Serve hot!

Butter Garlic Mushrooms
Ingredients
- 2 tbsp butter
- 1 tbsp garlic
- 1 medium-sized onion
- 10- 12 peeled mushrooms (without stem)
- Finely chopped coriander
- 1/2 tsp mixed herbs
- 1/2 tsp chilli flakes
- ½ cup fresh cream (optional)
- Salt to taste
Method:
- Heat some butter in a pan. Once heated, add garlic and onion and saute until onions turn golden brown.
- Add the mushrooms, and once they turn soft add in coriander, mixed herbs, salt and chilli flakes.
- Mix it all well, and butter garlic mushrooms are ready! This dry mushroom recipe is very easy and quick to make.
- You can also add some fresh cream and cook for a minute on low flame for creamy butter garlic mushrooms.
Chilli Mushroom Dry
Ingredients:
- 250gm mushroom
- 1 tsp oil
- 2 slit green chillies
- 1 tbsp chopped garlic
- 2 onions chopped into cubes
- 1 capsicum chopped into cubes
- 2 tbsp tomato ketchup
- 1 tsp soy sauce
- 1 tsp vinegar
- 2 tsp green chilli sauce
- ¼ tsp pepper powder
- Salt to taste
For deep fry batter:
- 3 tbsp cornflour
- 1 tbsp maida
- 2 tsp ginger-garlic paste
- 1 tsp soy sauce
- 1/2 tsp pepper powder
- Salt to taste
For cornflour slurry:
- 1 tbsp cornflour
- 3 tbsp water
Method:
- In a bowl, take 3 tbsp cornflour, add 1 tbsp maida, 2 tsp ginger-garlic paste, 1 tsp soy sauce, 1/2 tsp pepper powder, some salt. Add a little water, to make a thick batter.
- Add mushrooms to this batter, and coat them well.
- In a pan, heat oil and deep fry the mushrooms till they are brown and crispy. Keep them aside.
- Now, heat 1 tsp oil in a pan, and add slit green chillies, chopped garlic, and stir fry for a minute.
- Add onions,1capsicum and stir fry until the onions turn translucent.
- Once done, add tomato ketchup, soy sauce, vinegar, green chilli sauce, salt and mix well.
- Add deep-fried mushrooms to this and mix well. Add cornflour slurry (1 tbsp cornflour + 3 tbsp water) to it and cook until the sauce thickens.
- Add 1/4 tsp pepper powder and mix well. Garnish with spring onion.

Mushroom Pepper Fry
Ingredients:
- 250 gm mushroom
- 1 tbsp oil
- 1 medium sized onion chopped
- 7 cloves garlic finely chopped
- 1 green chilli
- 12 curry leaves
- ½ tsp chilli powder
- ¼ tsp garam masala powder
- 2 tbsp water
- 2 tsp soy sauce
- 1 tsp pepper powder
- Salt to taste
For the batter:
- 3 tbsp maida
- 3 tbsp cornflour
- ½ tsp salt
- ½ tsp pepper powder
- Water (as needed)
Method:
- In a bowl, mix cornflour, maida, salt, pepper and some water to create the batter.
- Add chopped mushrooms to this batter and coat them well.
- Heat oil in a deep pan, and deep fry the mushrooms until they turn crispy. Once fried, set them aside.
- In a pan, heat oil, and add garlic and onion, and stir fry for a minute.
- Add green chilli, curry leaves, chilli powder, garam masala powder, soy sauce, salt and 2 tbsp water and stir fry.
- Add deep-fried mushrooms to this and toss.
- Add pepper powder, and stir fry for 30 seconds. Mushroom pepper fry is ready to serve! This dry mushroom recipe is very easy to make, so try it at home.

Mushroom Butter Masala
Ingredients:
- 15 button mushrooms sliced
- 1 tbsp ghee
- 1 large onion
- 1 tbsp butter
- 6 garlic cloves
- 1 tsp garam masala
- 1 piece of ginger
- 1 tsp red chilli powder
- 2 green chillies chopped
- ¼ tsp roasted cumin powder
- Freshly chopped coriander leaves
- ½ cup cream
- 1 ½ cup tomato puree
- 1 tbsp cashew nuts
- Salt to taste
Method:
- In a mixer grinder, add onions, ginger, garlic, red chilli powder, roasted cumin seed powder and garam masala. Grind it to form a smooth paste.
- In a pan, heat some ghee and add green chillies and the onion paste prepared earlier. Saute the onion paste for 2-3 minutes.
- Add tomato puree, and cook it well for 4-5 minutes.
- Add some fresh cream, and mix well. Add some water, and let the gravy boil.
- Once it boils, add coriander leaves and salt. Once cooked, get it off the flame.
- In another pan, heat some butter and add capsicums and sliced mushrooms. Sauté them for 2-3 minutes.
- Add capsicums and mushrooms to the gravy, and mix well. Mushroom butter masala is ready. This gravy mushroom recipe is uncomplicated, and tastes yummy!
Kadhai Mushroom
Ingredients:
- 2 tbsp oil
- 50 gm onion chopped into cubes
- 50 gm capsicum chopped into cubes
- 250 gm mushrooms sliced
- 1 tbsp coriander seeds
- 1 tsp cumin seeds
- 3 cloves
- 2 cardamom
- ¼ tsp peppercorns
- 1 cinnamon stick
- 3 dry chillies
- 1 bay leaf
- 2 tbsp oil
- 1 tbsp ginger garlic paste
- 170 gm onions
- 250 gm tomato puree
- ½ tsp turmeric
- 1 tsp salt
- ½ tsp red chilli powder
- 2 tbsp fresh cream
- 250 ml water
- 1 tsp kasuri methi
- Coriander for garnishing
Method:
- Sauté 50 gm onion, 50 gm capsicum in 2 tbsp oil.
- Add mushrooms to it, and cook well for 7-10 minutes until the mushrooms turn golden brown in colour. Once cooked, keep them aside.
- In another pan, add coriander seeds, cumin seeds, cloves, cardamom, peppercorns, cinnamon stick, dry red chillies, bay leaf, and roast them. Transfer these to a mixer grinder or blender and blend into a fine powder.
- Heat 2 tbsp oil in a pan, add 1 tsp cumin seeds, ginger garlic paste, and saute for a minute.
- Add 170 gms of onions and fry until they turn golden brown. Add tomato puree, and cook for 7 minutes on medium heat.
- Now, add turmeric powder, the blended garam masala, salt, red chilli powder and mix well. Cook for 3-5 minutes.
- Add fresh cream and mix well. Then add the sauteed onions, capsicums and mushrooms in it and mix well. Cook for 5-7 minutes on medium flame.
- Add 250 ml water to it, and bring it to a boil. Add kasuri methi, and let it cook for 3-5 minutes.
- Once cooked, garnish with coriander. Kadhai mushroom is ready to serve!
