Sarson Ka Saag
One of the most popular Lohri special dishes is Sarson ka saag. Honestly, no one can get enough of it. The best part is you can make it easily at home.
Ingredients:
- 4 cups chopped mustard leaves
- 2 cups chopped spinach leaves
- 1 cup chopped bathua leaves (Optional)
- 1 small tomato
- 2 green chillies
- 3-4 cloves of garlic
- 1-inch piece of ginger
- 1 onion
- 1 and a half tablespoon ghee
- 1 cup water
- 1 tablespoon cornflour
How to make it:
Chop and clean all the green leafy vegetables to prepare this Lohri special dish. Then get ready to wash them, you have to be through with the washing as leafy greens often have mud or soil clinging to them. Put the greens in a pressure cooker. Meanwhile, finely chop tomato, garlic, ginger, green chillies and onion. Put them in the cooker too. Add red chilli powder, asafoetida & salt according to your taste. Add water and cover the cooker. Cook for 5-10 minutes on medium flame till the veggies become soft. Let the mixture cool down for a bit. Blend them and then add cornflour. Blend it till the time you have a smooth puree. Pour it in a pan and turn on the heat. Simmer for 30 minutes and stir occasionally. Once it is done, it is time to fry the saag. Pour ghee into a pan, add a finely chopped onion and the saag. You can add more spices as per your taste. Fry for 5 minutes and serve it hot.
Makki Ki Roti
This Lohri dish is best paired with sarson ka saag! The Lohri special dish is a staple for this festival.
Ingredients:
- 2 cups maize flour
- 1/2 cup hot water
- 1 teaspoon ajwain (carom seeds)
- 2 tablespoons ghee
- Salt
How to make it:
Start by making dough for the Lohri special dish. In a bowl, take 2 cups maize flour or cornmeal, 1 teaspoon carom seeds and salt. Mix it all properly. Heat one cup of water separately in a pan, boil it. Then add this hot water to the flour. Mix it together and keep it aside. When the mixture has cooled down a bit, start kneading the dough. In case the dough is sticky, add more flour, if it is dry then add water. Knead it again and again till you have a smooth but firm dough. Make small balls and flatten them. Then, sprinkle some maize flour on the rolling board and place the dough ball on it. Start to make flat circles or rotis. Once that is done, take ghee and spread it on a pan. Place the roti on the pan and let it roast. Flip to the other side to make sure it is evenly done.
Pindi Chole
No one can have enough of Pindi chole! This Lohri food is a personal favourite and it is easy to make at home.
Ingredients:
- 1 and a half cups dried chickpeas
- 3 cups of water
- 3 cloves
- 2 sticks of 1-inch cinnamon
- 2 black cardamoms
- 2 green cardamoms
- 2 tej patta
- 1 teaspoon black salt
- 1 black tea bag (optional)
- 1.5-inches ginger
- 7-8 garlic cloves
- 2 teaspoons coriander powder
- 2-3 teaspoons chole masala powder
- 1 teaspoon garam masala powder
- 1 teaspoon dry mango powder
How to make it:
This Lohri special dish needs some planning! So, firstly you need to take 1 and a half cups of dried chickpeas and wash them. Then soak them overnight or for 8-10 hours in 3 cups of water. Drain the water and wash the chickpeas in freshwater. Then, put them in a pressure cooker and add 3 cloves, 2 sticks of 1-inch cinnamon, 2 black cardamoms, 2 green cardamoms, 2 tej patta, 1 teaspoon black salt and 1 black tea bag (optional). Add 1 and a half cups of water. Cook for 20 minutes and turn off the gas. Drain the water and remove the whole spices and the tea bag. Now, get ready for the frying part. Take 1.5-inches of ginger and 7 to 8 garlic cloves and make a paste. Heat 2 tablespoons of oil, add the ginger-garlic paste. Saute for a bit and then add half teaspoon red chilli powder, 2 teaspoons coriander powder, 2 to 3 teaspoons chole masala powder, 1 teaspoon garam masala powder and 1 teaspoon dry mango powder and salt to taste. Saute again. Add the chickpeas and mix them well. Make sure the chickpeas are evenly cooked. Cook for 5-10 minutes and you are done.

Gur Ki Roti
One of the most popular Lohri special sweets! Gur ki roti is an excellent option for morning breakfast or evening snacks.
Ingredients:
- 1 cup jaggery powder
- 4 tablespoons water
- 2 cups whole wheat flour
- 2 teaspoon fennel seeds
- 2 tablespoon ghee
How to make it:
You have to start by preparing the dough for this amazing Lohri food. Take 1 cup jaggery powder and 4 tablespoons of water in a bowl. You can also use grated jaggery instead of jaggery powder. Mix it all well and leave it for 45 minutes. Make sure that jaggery is completely dissolved. Then in another bowl take 2 cups of whole wheat flour. Then add 2 teaspoon fennel seeds and 2 tablespoon ghee. Meanwhile, stir the jaggery mix and then strain it. Pour it directly into the bowl containing flour. Mix it well and knead the dough. The dough will be sticky. Apply ghee on a rolling board and put the dough on it. Make small round rotis. Place it on a hot pan and roast it till it is brown. Put ghee on top. Then turn to the other side and repeat the process. Flip it a few times to make sure it is cooked to perfection.
Atta Ladoo
Another amazing Lohri special dish! It is super easy to make atta ladoo at home in a few simple steps. It will make your celebration extra special.
Ingredients:
- 1/3 cup sugar
- 1 cup whole wheat flour
- 1/3 cup ghee
- 1 tablespoon raisins
How to make it:
Get ready to prepare this delicious Lohri food! Take 1/3 cup of sugar and grind it into a fine powder. Now keep it aside. Take 1 cup whole wheat flour in a thick-bottomed broad pan. Then keep the pan on a low flame and roast the flour. Make sure you stir continuously so that your flour is evenly roasted. The roasting process will take 10 minutes, depending on the pan. Once the flour has turned brown, turn off the gas. Then add ghee to the mix and stir it well. Roast it for 5 minutes once again. Turn off the flame and add the powdered sugar. Add 1 tablespoon raisins and mix it well. You can add other dry fruits too, just make sure they are finely chopped or crushed. Mix it all well, there shouldn’t be any lumps in the material. Take a small amount of the mixture and make small round balls or ladoo. You can decide the size you want to go for and voila you are done.
